Materials needed:
1 / 2 warm water (110 degrees F.)
1 / 2 cup warm milk (110 degrees F.)
1 / 2 cup granulated sugar
2 teaspoons salt
1 teaspoon ground nutmeg
1 teaspoon Lemon Zest
5 egg yolks, room temperature
1 / 2 cup butter, room temperature
4 3 / 4 cups bread flour or unbleached all-purpose flour
3 teaspoons instant active dry yeast
1 teaspoons ground cinnamon
1 egg white beaten with 1 tablespoon milk
1 tiny (1-inch) plastic doll
Colored Sugars (see below)
Lemon Frosting (see recipe below)
How to make:
1. Place all ingredients in bread pan according to manufacturer's instructions; select dough setting and press start. NOTE: Check the dough (do not be afraid to open the lid). It should form a nice elastic ball. If you think the dough is too moist, add additional flour (a tablespoon at a time). The same is true if the dough is looking dry and gnarly. Add warm water (a tablespoon at a time).
2. When dough cycle has finished, remove dough from pan and put into a lightly oiled bowl. Cover bowl with plastic wrap and place in a draft free place to rise for approximately 1 hour or until the dough doubles in volume.
3. Lightly coat a large baking sheet with butter or vegetable spray; set aside.
4. Remove dough from bowl and place on a lightly-oiled surface. Using your Fist, punch dough down with a heavy blow. Sprinkle cinnamon over the top, pat and shape dough into a cylinder. Twist dough to form a curled cylinder and loop cylinder onto the buttered baking sheet. Pinch the ends together to form a circle. Cover dough with plastic wrap and let sit for approximately 45 minutes or until the dough doubles in volume.
5. Preheat oven to 375 degrees F. Brush top and sides of cake with egg white wash and bake on middle rack of oven for 35 to 40 minutes or until golden brown. (A good check is to use an instant thermometer to test your bread. The temperature should be between 200 and 210 degrees.) Remove from oven and place on a wire rack to cool. If desired, at this time, you can hide the plastic doll in the cake.

* 1 3 / 4 cups sugar
* 1 / 4 teaspoon salt
* 1 cup cake flour, sifted
* 12 egg whites (the closer to room temperature the better)
* 1 / 3 cup warm water
* 1 teaspoon orange extract, or extract of your choice
* 1 1 / 2 teaspoons cream of tartar

Directions:
* Preheat oven to 350 degrees F.
* In a food processor spin sugar about 2 minutes until it is Superfine. SIFT half of the sugar with the salt the cake flour, setting the remaining sugar aside.
* In a large bowl, use a balloon whisk to thoroughly combine egg whites, water, orange extract, and cream of tartar. After 2 minutes, switch to a hand mixer. Slowly SIFT the reserved sugar, beating continuously at medium speed. Once you have Achieved medium peaks, SIFT road of the flour mixture in to dust the top of The foam. Using a spatula fold in gently. Continue until all of the flour mixture is incorporated.
* Carefully spoon the mixture into an ungreased tube pan. Bake for 35 minutes before checking for doneness with a wooden skewer. (When inserted Halfway between the inner and outer wall, the skewer should come out dry).
*Cool upside down on cooling rack for at least an hour before removing from pan.
Cook's Note:
Since they're easier to use the separate freshest eggs you can get.

This time my mother would make three recipes are:

Quick Recipe Swiss Steak

Ingredients

* 1 tablespoon vegetable oil
* 2 pounds cube steaks, pounded thin and cut into bite-size pieces
* 1 1 / 2 tablespoons all-purpose flour
* 1 medium onion, chopped
* 1 pound mushrooms, sliced
* Salt and pepper to taste
* 1 (1.2 ounce) package brown gravy mix
* 2 (14.5 ounce) cans stewed tomatoes
* 1 (12 ounce) package egg noodles

Directions

1. Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Until browned Fry on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch ovens, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.
2. About 20 minutes before the steak is finished, fill a large pot with water and bring to a boil. Add pasta, and cook until al dente, about 8 to 10 minutes; drain.
3. Swiss steak Serve over noodles.

Footnotes
Can be made in the crock pot. Just brown meat as instructions indicate, add ingredients to crock pot, and cook on low all day.
If you can not find 'cubed steak,' just hand the butcher in your grocery store a package of round steaks and ask him to cube them for you.

* 5 ounces bittersweet chocolate, chopped
* 1 pint fresh strawberries with leaves

Directions

1. In a microwave-safe bowl, or in the top of a double boiler over simmering water, cook chocolate until melted. Stir occasionally until chocolate is smooth. Holding berries by the stem, dip each one in Molten chocolate, about three-quarters of the way to the stem. Place, stem side down, on wire rack and chill in refrigerator until hardened.

* 1 package (1 pound) Nutter Butter peanut butter cookies
* Miniature semisweet chocolate chips

Directions

* In a microwave-safe bowl, melt candy coating, stirring occasionally. Dip cookies into coating, covering completely. Place on waxed paper.
* Brush ends with a pastry brush dipped in coating where fingers touched cookies. While coating is still warm, place two chips on each cookie for eyes. Let stand until set. Store in an airtight container. Yield: about 3 dozen.

Gravy RecipeHolidays are a time for family to get together and rejoice life. Preparing the traditional meal during these holidays, especially Thanksgiving can be very stressful. You don't want to be known as a bad cook and you also want people to enjoy the food they eat. One of the biggest problem causers for the holidays, especially Thanksgiving is the gravy. I have include a recipe to help you overcome the gravy issues you might face.


Gravy RecipeGiblet Gravy

Ingredients:

1 Package Neck, heart, gizzard from TURKEY giblets
1 Medium carrot thickly sliced
1 Medium onion thickly sliced
1 Medium celery rib thickly sliced 1/2 Teaspoon salt
1 TURKEY liver
3 Tablespoons fat from poultry drippings
3 Tablespoons all-purpose flour
1/2 Teaspoon salt
pepper to taste

Instructions:

In a 3-quart saucepan, over high heat, place neck, heart, gizzard, vegetables, and salt in enough water to cover.
Heat to boiling. Reduce heat to low; cover and simmer 45 minutes.
Add Liver and Cook 15 minutes longer.
Strain broth into a large bowl; cover and reserve broth in the refrigerator.

To make the gravy, remove the cooked turkey and roasting rack from the roasting pan. Pour poultry drippings through a sieve into a 4-cup measuring cup.
Add 1 cup giblet broth to the roasting pan and stir until the crusty brown bits are loosened; pour the deglazed liquid/broth into the 4-cup measure.
Let the mixture stand a few minutes, until the fat rises to the top.
Over medium heat, spoon 3 tablespoons fat from the poultry drippings into a 2-quart saucepan.
Whisk flour and salt into the heated fat and continue to cook and stir until the flour turns golden.

Meanwhile, skim and discard any fat that remains on top of the poultry drippings.

Add remaining broth and enough water to the poultry drippings to equal 3-1/2 cups.
Gradually whisk in warm poultry drippings/broth mixture.
Pull cooked meat from the neck and discard bones.
Coarsely chop the neck meat and cooked giblets and stir into gravy.
Season with salt and pepper.
Cook and stir until gravy simmers and is slightly thick.

- As much ground beef as you want. For burgers for four people you will need around a normal pack from the store but you kind of just need to judge it by eye
- Salt and pepper
- Toppings of your choice (relish, cheese, bacon, burger buns, tomato ketchup, lettuce) or anything else you like on your burger

Method:
- Combine with your hands the ground beef with the salt and pepper in a bowl. Create burgers, whatever size you want with the ground beef.
- If you wish to stuff the burgers with anything I like cheddar cheese. Make a well in the burgers with your fingers. Place the filling in the well and cover over with the ground beef you took out making the well.
- Cook under a grill, I like till about medium-well but whatever you like. If you are using bacon then place that under the grill with about 7 minutes to go. You can also cook in a pan if you wish.

Any dry white wine will suffice, but Pinot Grigio will taste best. Remember to never cook with a wine that you would not drink. Taste it before cooking to make sure it hasn't gone bad. To accompany the scallops, serve wild rice on the side, or mix the scallops in with pasta. A fresh green salad and a crusty loaf of bread also go nicely with the dish.

1 pound fresh scallops

Kosher salt and freshly ground black pepper

All-purpose flour, for dredging

4 tablespoons (1/2 stick) unsalted butter, divided

1/2 cup chopped shallots (2 large)

1 garlic clove, minced

1/4 cup chopped fresh flat-leaf parsley leaves

1/3 cup dry white wine

1 lemon, cut in 1/2


Recipe ToIn a large saute pan, heat 2 tablespoons of butter over high heat until sizzling and add the scallops in 1 layer. Lower the heat to medium and allow the scallops to brown lightly on 1 side without moving them, then turn and brown lightly on the other side. This should take 3 to 4 minutes, total. Melt the rest of the butter in the pan with the scallops, then add the shallots, garlic, and parsley and saute for 2 more minutes, tossing the seasonings with the scallops. Serve them hot with a squeeze of lemon, and offer guests a bowl of cut up wedges in case they like their scallops extra lemony.

1.Wash pork chop clean. Mix it well with Marinade and marinate it for 30 minutes.
2.Preheat the oven to 200 degree. Glaze the baking tin with some butter and arrange the pork chop neatly on it.
3.Grill it in the oven for 10 minutes.
4.Flip the pork chop and brush it with the remaining marinade. Raise the oven temperature to 240 degree and bake it for another 10 minutes. Serve hot.

Quick Indian Lamb and Spinach Recipe

Total cooking time: 20 minutes
Serves: 4

Ingredients:

- oil, for cooking
- 600 g (1V4 lb) lamb fillet, diagonally sliced
- 500 g (1lb) English spinach, shredded
- 2 cloves garlic, chopped
- 2 tablespoons toasted pine nuts
- 2 onions, sliced
- 1 tablespoon finely chopped fresh ginger
- 1/4 cup (60ml/2 fl oz.) oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground allspice
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon ground cinnamon
- 1 tablespoon lime juice

1. Combine the garlic, the ginger, the salt, the spices and the oil in a glass or ceramic bowl. Then add the sliced lamb and mix it until it becomes well combined. Cover it and refrigerate it for at least 2 hours.

2. After that heat the wok until it becomes hot, and stir-fry the lamb in three batches over high heat for about 2-3 minutes or so, or until the lamb becomes golden brown and well cooked. Then remove the lamb from the wok and cover it to keep warm.

3. After that reheat the wok and add 1 tablespoon of oil. Then stir-fry the sliced onion over medium-high heat for about 2-3 minutes or so. Then add the spinach, cover and steam for 1 or 2 more minutes. Then return the lamb and juices to the wok along with the lime juice and toasted pine nuts. Toss until thoroughly combined and season well with salt and pepper.
